Cooked carrots provide a melt-in-the-mouth sweetness giving depth to any dish, and you can add herbs such as thyme or rosemary, or crushed garlic for extra flavour too.
Cheddar and Apple Crunch Recipe
The cheddar and apple crunch is the perfect summer salad with plenty of crunchy texture and zingy taste. Great for a summer barbeque or picnic.
Toss the bread cubes in 1 tbsp of the oil then toast under a medium grill for 3mins, tossing occasionally until golden and crisp. Set aside.
Thinly slice the apple and place in a bowl with the lemon juice and remaining oil, toss to mix. Add the cheese, carrot, croutons and salad leaves. Toss well to mix before serving.

1 small red apple, quartered and cored
